Just a little tip.
Use CA and a kicker to tack your fins on in a couple spots.
If the alignment goes bad you can break them off and start over.
If it's good then put enough CA to hold it on and epoxy it down.
Works for me on rockets upto P impulse and over 3000MPH.

Harbor Freight has a nice $10 scale for weighing epoxy.

West has no issues with temperature.
With rockets 50 or 100 deg is not going to help you out much.
It has alot to do with residence time(did I make that up?).
How long it's exposed to high temp.
Usually milliseconds in our hobby.

The orange section fincan had 500deg stable epoxy but the forward tube under the NC was West systems epoxy.
You can see that it didn't mind Mach 3.5 and melted paint.
So don't worry about it.
